WINEMAKING
Clay and flint limestones. This effervescent Saumur is traditionally made from the “Coeur de cuvee”. After the individual vinification of the 3 varietals, we proceed to the assembly and then to the bottling for the second vinification. The wine is aged for 24 months in our cellars of “tuffeau” at a constant temperature of 13 degrees
TASTING
Light yellow color with long strings of bubbles and a light persistent foam. The nose is attractive with subtle notes of apricot, ripe apple and brioche. Elegant and pure with a surprising length leaving notes of candied pineapple.
