METHOD
Sugar cane is carefully selected for its aromatic qualities. It comes from plantations located less than 5 kilometers from the distillery in order to reduce the time between the cutting and processing of the cane.
Daily manual cutting. Sugar cane is pressed and put into fermentation in the same day of the harvest. Cane juice from the press is fermented with a yeast strain developed especially for the realization of agricultural rums, over several days, to allow a particular development of aromas.
Distillation is done daily in a traditional column Copper Alembic
TASTING
The nose is fresh and rich with notes of lime, mango and apricot.
The palate is creamy, on cane juice, pear and marzipan.
The finish is long, with vegetal and citrus aromas
